Oh, Potatoes

I know I'm breaking some peoples' rules by okay'ing the potato. This is where I stand; if you can tolerate nightshade fruits and veggies, I say go ahead and benefit from all the nutrients found in the potato, as long as it’s prepared in a healthful way. They've got some really good things going for them: nutrients like vitamins B6 and C, potassium, magnesium and copper. So in moderation (as with most starchy carbs), and as long as your body makes no objection when you eat them, I think they're just fine.
